年前本猫在美里吃到盘让偶喷血滴西班牙大锅饭(Spanish Paella-点击查阅:维基百科):
当时偶怎样都没料到到是那么超级大一锅,起码4人份呢!结果饭吃不到三成就胀死了~整锅滴饭,除了个“多”字外,还真是不像样啊!当时偶付了28大元,材料放啥了?长豆?中国香肠?吐血啊(荷包死得真不甘心...)!
说起这西班牙大锅饭,煮法倒相当近似偶喜爱滴意大利烩饭(Risotto-点击查阅:维基百科),偶曾见偶厨艺启蒙恩师麦克史密斯大厨做过一次(点击查阅:原食谱),所以日前轮到偶煮晚餐时,便决定了自己下厨做一次西班牙大锅饭,弥补在美里那次滴遗憾~呵呵!本猫滴食谱无法照足麦克大厨滴原版(一来意大利血香肠本地大概是找不到滴,二来是即兴煮滴,没真滴预备所有材料),但基本上有高汤(美极鸡精块)和米两样也就凑和了。
首先是热锅(平底锅为佳,本来西班牙文 paella 就是指那个平底锅嘛~),烧些油(地中海菜嘛~有橄榄油就用橄榄油呗~)。家里没肉类了,所以不必事先煎肉,直接炒香洋葱吧。

稍微拌炒一下后,就下米咯!
将洗净滴米(本来该用圆梗米,如日本米或意大利/西班牙出产滴短梗米,但本地实在太贵了,所以偶只用普通滴香米)下锅炒一炒,让每颗米都拌一拌油,有助于煮出来后米粒不会黏在一起。
接着是酱汁,西班牙大锅饭需要高汤和酒,可怜猫子只有美极鸡精块,煮出来只怕会“美极味”,那就很纳闷一下了,于是把心一横--直接使用偶日前买了很多滴【熟番茄罐头】!把整罐滴罐头加点水、盐和胡椒粉(也可加些香料如牛至(Oregano)等),用【手握搅拌器】搅烂,就成了香香且充满西班牙风味滴汤汁咯!偶将之全部倒进锅里,能把饭烩熟就行了~呵呵呵!此外,西班牙大锅饭鲜艳滴橙红色是用【番红花】调色滴,但这种香料实在是太太太太贵了(古晋甚至没看过),所以,用番茄汁还省了这笔钱,呵呵~
先开大火烧滚汤汁,然后以中小火慢慢熬,间中稍微拌一拌以免粘锅。由于使用滴是本地米,可盖上锅盖焖一焖,不过可别焖太久咯,西班牙大锅饭和意大利烩饭有点相同:饭粒要煮到软而不烂(al dente)才叫功夫哟~不过,中国人可能就认为那是“不够熟”了,呵呵~
偶有些剩下滴鲜虾,待烩饭将近熟够时才添加,就不会煮得太久。此外也切了新鲜滴意大利香芹/荷兰芹(Parsley,本地客家人好像有种类似滴香草叫“tai3 nye4”滴,偶家后面有种~),同样是在最后才添加,以免香芹滴味道消散无影。

唔~饭粒颗颗香软且有咬口,又吸收了浓浓滴番茄汁和鲜虾等味道,风味十足,棒哦!
西班牙大锅饭大体上很多是使用海鲜,毕竟西班牙海岸线还蛮长滴,只是猫子这次煮大锅饭,只有小虾几条,未免不怎么象样,但西班牙美食精髓不外乎新鲜、精彩和热情,如此算来,偶这锅也不差了,呵呵呵~

Cook it yourself is another option, Ting & Ting actually sells Arborio Rice, but is priced at near RM24 per KG.
yeah i went to beccari in search for risotto. they don't have it in the menu, i didn't give up. So i asked the waitress whether they have any risotto. she said the kitchen can cook seafood/mushroom risotto for me. yippee!! i got the seafood risotto.

RM30 ah? Tax included? That's even more expensive than my KK Bella Italia's risotto :P
But hey, occasionally I can go also la, just ask me during early of the months XD
